Veggie Fall Bowl

Who’s craving all of the cozy food in this chilly weather?! This bowl is loaded with seasonal veggies and is featured next to my favorite cooking utensil ( I knead you 🤣)⠀
Ingredients:⠀
3 large sweet potatoes⠀
4 cups chopped kale ⠀
1/2 apple ⠀
1-2 Tbsp sliced almonds ⠀
2 Tbsp Coconut oil ⠀
2 tsp minced garlic ⠀
Seasoning to taste:⠀
Red pepper flakes ⠀
Pumpkin pie spice ⠀
Garlic salt ⠀
Pepper ⠀
Directions:⠀
Sprinkle pumpkin pie spice on sweet potatoes and bake at 425 for about 30 min (flipping half way through) ⠀
When potatoes are done, melt the coconut oil mixed with garlic + red pepper flakes for 1 min. ⠀
Add in kale and sauté for about 5 min or until kale is wilted. ⠀
Mix in sweet potatoes, apple, and almonds and stir until everything is coated in the coconut oil garlicy goodness. Salt and pepper to taste. ⠀
Place in an adorable bowl, get cozy, and slowly eat while you soak in all the fall feels! Happy savoring! 🍁🖤⠀
