Is anybody else craving all the comfort food in this chilly weather?! Cozy up with one of my favorite simple, plant-based pasta dishes! This pasta bowl is topped with avocado slices so you get the creamy, rich satisfaction of classic comfort food!
Fair warning: this mama tends to do a lot of “to taste” - play around with this and make this simple recipe yours!
- GF Pasta (I love banza), 1 box
- 4 Cups Chopped Kale
- Olive Oil
- 2 Tsp Minced Garlic
- Crushed Red Pepper Flakes
- Cherry Tomatoes
- Black Olives
- Salt and Pepper
1. Cook pasta according to directions.
2. In a separate pan, cook oil, garlic, and crushed red peppers for 1 minute. Add kale and cook on medium high for 5 minutes or until wilted. 3. Drain pasta and combine both sautéd kale and pasta in pot. 4. Add cherry tomatoes and olives to pasta and season with oregano, salt, and pepper. 5. Serve with sliced avocado on top and enjoy!
