Breakfast Sweet Potato Bowl

Nothing is more healing + satisfying than a yummy sweet potato!

Okay, maybe there are other things out there, but I’ve always been slightly sweet potato obsessed ...and eat it for breakfast? Yes, please!

Along with the amazing nutrient benefits (packed with vitamins and minerals, high fiber, whole food), this is one of our regular breakfast go-to’s! A winner for both our 2 year old and 10 month old (and one of mamas favorites)!

Sweet Potato Breakfast Bowl

makes about 4 servings


Sweet Potato Base

2 sweet potatoes

1/2 C dairy-free milk

2 tbsp flax seed

dash of cinnamon

sprinkle of pink Himalayan salt


The possibilities are endless, but here are some of our family favorites! Hemp Seeds (great protein)

Almond Butter

Fresh Berries

Drizzle of Coconut Yogurt

Dates (our toddler LOVES these)

Chia Seeds

Flax Seeds


1. Bake the sweet potatoes. You can do this however you prefer, but we almost always pop them in the microwave because #momlife. Wash off the potato skins, and wrap potatoes in a damp paper towel. Microwave for 4 minutes. Flip the potato over, and microwave another 4 minutes or until totally soft and mashable (is that a word?) Let sit in microwave for 1 minute - potato will be hot!

2. Take the peel off of the potatoes and mash all sweet potato base ingredients together until you reach a consistency you prefer. I like mine a little chunky so I tend to not whip mine until creamy; however, that’s how my kiddos love it!

3. Add toppings! The possibilities truly are endless. I’ve always loved that hot/cold thing with food, so I LOVE fresh berries and a drizzle of coconut yogurt! If your toddler is anything like mine, she is in helping mode, so this can be an easy, fun way for kiddos to help mama in the kitchen! Just make sure to keep an eye on things otherwise you might end up with a chia seed bowl instead of a sweet potatoes bowl (our little Evelyn calls them black sprinkles and can’t get enough!)

Store any leftovers in an airtight container, and they should last in the fridge for up to 5 days.
